This is one of the traditional meals in Slovakia. You can know it like „potato rösti“, too. This is not the healthiest  dish, but it is easy to make and very delicious. And I mean DELICIOUS! I remember platsky, how we call it in Slovakia, from my childhood and do not know any person who would not love it. For example, you can serve it with bean cream soup, or find it filled with a meat ragout in the Slovak restaurants. But I do not recommend that.

This recipe is from my grand mother and I have „refined“ it with an aubergine purée, smoked salmon and crème fraiche dip. It is about 4 servings.

For the potato pancakes: 500g floury potatoes, peeled / 60g plain flour / 3 egg yolks / 1 tbsp marjoram / 1 clove garlic, pealed and crushed / salt and freshly ground black pepper

For the aubergine purée: 1 medium aubergine / 120ml plain yoghurt / 2 tbsp freshly chopped coriander / 1 clove garlic, peeled and crushed / squeeze of lemon juice / salt and freshly ground black pepper

For the crème fraiche dip: 200ml crème fraiche / 1 shallot, peeled and chopped / 1 paprika powder / pinch of chili

For the smoked salmon: 1 package of smoked salmon / 2 egg yolks / 2 tbsp olive olive oil / 1 tsp dijon mustard / 1 tbsp freshly chopped chive

Preparation method:

  1. Preheat the oven to 200°C. Roast the aubergine on a baking sheet until tender – about 20-30 minutes. Cool.
  2. In the mean time, grate the potatoes, add the salt and squeeze out any juice.
  3. Beat in the egg yolks, flour, marjoram, freshly ground black pepper and garlic and mix well.
  4. Start to prepare the toppings. Mix the crème fraiche with challot, paprika powder, chilli. For the salmon, mix egg yolks, dijon, olive oil and chives.
  5. At this time, the aubergine could be done. Scrape the flesh and squeeze out any juices. Put in a food processor and whiz together with the fresh coriander, garlic, lemon juice and a little seasoning.
  6. Heat the sunflower oil in a frying pan and fry the platsky until golden-brown or crispy on each side.
  7. Top and serve with the aubergine purée, smoked salmon and crème fraiche.
