TORTA SALATA CON RADICCHIO ROSSO BY MARIA

This tart was recommended to me by a friend of mine Maria. She lives with her family on a lovely farm Oliwood in the countryside of Tuscany. They grow many types of fruit and vegetable there. Nowadays, Maria starts to learn how to produce an olive oil. I really admire her!

In my research, I had explored the Torta Salata con Radicchio Rosso’s recipes mainly with ricotta and pancetta. The Maria’s one is with mozzarella and ham. I believe there are many variations in every Italian region. But the important ingredient is radicchio rosso.

I have found this recipe very easy, tasty and great idea for an appetiser. I baked it in a quiche sheet, but I could imagine to make a small cute variation and bake it in a cupcake sheet. In this case, I would serve it with a simple tomato salad with olive oil and balsamico.

Mostly I like the balanced combination of the bitter radicchio rosso with mild mozzarella, smokey ham and spicy Parmesan.

Ingredients: 1 pack of ready-rolled puff pastry / 1 big radicchio rosso / 1 tbsp butter / 1 mozzarella / 100g ham / olive oil / salt, pepper to season

Preparation method:

  1. Pre-heat the oven to 220°C. Cut the salad.
  2. Heat the butter in a large pan and add the salad. Fry for a few minutes until brown. Season with salt and black pepper. Set aside.
  3. Roll out the puff pastry to a baking sheet. Add the salad.
  4. Scatter over the mozzarella and ham. (I used grated Parmesan as well.)
  5. Dot the top with the olive oil.
  6. Bake for 20 mins or until the pastry is crisp.
