XMAS GIFTS WITHOUT STRESS

In 2011 I have decided to do things differently. I have tried to keep the promise, I gave to myself in the beginning of the year, during the Christmas time as well. So I didn’t run around the shops to get presents, but I have made them. These four delicious presents don’t take more than an afternoon. I can guarantee you forget about the stress outside on the streets and shops. It all goes better with a nice music. My favourite for cooking is Superfly.fm radio. And do you know why? Because they don’t play the annoying Christmas hits!

PICKLED AUBERGINE WITH FETA CHEESE & CHILLI (aprox. 300ml glass)

Ingredients: 1 aubergine / 10 tbsp red wine vinegar / 70ml virgin olive oil / 4 rosemary sprigs / 1 crashed chilli + few for decoration / 200g feta cheese / salt

Preparation method:

  1. The night before the preparation, cut the aubergine lengthways. Put the pieces to a thieve Toss the pieces with a salt, and cover them with a foil. Place the thieve on a bigger bowl. Set aside for an hour to get rid off the aubergine liquid.
  2. Put few spoons of the vinegar and the same amount of water to a pan and bring it to boil. Add aubergines and cook for 3 min. (likely to be processed in couple of times.) Repeat with the rest of the aubergines.
  3. Heat the pan, toss the aubergines with the oil and roast them aprox. 2 min. on each side.
  4. In another pan, heat the rest of the oil, add the rosemary and chilli. The mixture should be warm, but not hot.
  5. Fill the glass with the aubergine and cheese and pour the oil mixture over. Close it, set it aside to cool. Consume it in 1 week.
SPICY NUTS (aprox. 200ml glass)

Ingredients: 200g mixture of nuts (I used walnuts, cashew and Brazil nuts & almonds) / 1 tbsp butter / 1 tsp salt, ½ tsp chilli or hot paprika powder / 1 tbsp rosemary needles, chopped + 3 sprigs for decoration

Preparation method:

  1. Pre-heat the oven to 180ºC. Mix the nuts on a baking tray and roast in the oven until golden brown. Stir occasionally.
  2. Melt the butter and mix it with the rest of the ingredients. Add the mixture to the nuts and stir well.
  3. Place it to the glass, set aside to a colder place and consume in 1 week.

BLUE CHEESE CREAM (100ml glass)

Ingredients: 150g blue cheese / 25g softened butter / black pepper, freshly ground / 3 tbsp walnuts, chopped / 2 tbsp dried cranberries

Preparation method:

  1. Mix the cheese with the butter and add the pepper.
  2. Put the half amount of the walnuts and cranberries to the glass bottom.
  3. Add the cheese mixture and top with the rest of the walnuts and crenberries. Consume in 1 week.

TAHINI BALLS (aprox. 20 pieces)

Ingredients: 100g roasted seeds and nuts (I used sunflower & sesam seeds and chopped almonds) / 50g desiccated coconut / 50g chopped dates / 3 tbsp tahini / 1 vanilla pod (or cinnamon, or both) / desiccated coconut for the topping

Preparation method:

  1. Slit the vanilla pod open lengthway, then scrape out the small, sticky seeds using the tip of a small, sharp knife and mix it with all the ingredients.
  2. Shape balls and cover them in the coconut flakes (or in chopped nuts). If you prefer it sweeter, you can add a little bit of honey.
