Shimmy Shimmy Ya!“ But I’m talking about a tartare. I mean salmon tartare. Salmon tartare with avocado sorbet.

Ingredients: 110g caster sugar / 110ml water / 4 avocados, cut in half, peeled, stones removed / 4 tbsp lime juice / 4 tbsp chopped fresh coriander / ½ tsp ground coriander

Preparation method:

  1. Heat the caster sugar and the water in a pan over a medium heat for 4-5 minutes, or until the sugar has dissolved and the mixture resembles syrup. Set aside to cool.
  2. Blend the remaining avocado sorbet ingredients in a food processor to a rough purée.
  3. With the motor still running, pour the cooled sugar syrup into the food processor and continue to blend until the mixture is well combined and has thickened.
  4. Transfer the sorbet to a bowl (I used silicon cupcake forms) and chill in the freezer for at least one hour. Remove from the freezer five minutes before serving.

Ingredients: 450g salmon fillet, skin and pin bones removed, flesh cut into small cubes / 1 red chilli, seeds removed, flesh finely chopped / 2 spring onions, trimmed, finely sliced / ½ tsp ground coriander / ½ tsp ground cumin / 1 lime, zest and juice only / 3 tbsp olive oil / 3 tbsp chopped fresh coriander  / 4 sprigs fresh coriander, to serve

Preparation method:

  1. Gently mix all of the salmon tartare ingredients together in a bowl until well combined. Set aside for 3-4 minutes to macerate.

Ingredients: ½ lime, juice only / 2 tbsp avocado oil / ½ avocado, peeled, flesh finely chopped / 1 tbsp chopped fresh coriander

Preparation method:

  1. Whisk the lime juice and the avocado oil together until well combined, then add the avocado pieces and the chopped coriander and mix well. Season, to taste, with salt and freshly ground black pepper.
